Laurelhurst residents, Michael Tsai & Matthew Curtis, own a business called Three Sacks Full, "a pop-up restaurant dedicated to serving wholesome, satisfying food largely based on vegetables and grains."
The owners, who started the business three years ago, told the Laurelhurst Blog that they have both been in the restaurant industry for quite some time and have an interest in farming and growing organic vegetables and animals, as well as grapes to make wholesome food and wine.
They added:
We also wanted to create a restaurant/pop-up experience where grains and vegetables are the main focus while meat/fish take a slight back seat. This is how we enjoy eating at home and how we want to share our food: wholesome, honest, and simple.
We began doing sit down dinners at different restaurants around Seattle, but switched over to a regular take-home format once COVID-19 shut down the restaurants.
The owners also have a small farm plot in the Snoqualmie Valley where they grow a variety of heirloom organic vegetables that are incorporate into their menus.
One of the owners told the Laurelhurst Blog:
What we don't grow ourselves we source for other local farmers and regional producers. "Localism" has become a bit cliche and overused these days, but we truly are dedicated to using seasonal produce and sourcing as much as possible from our region.
Three Sacks Full offers "PopUp PickUps" which is paired with local wine. Tuesdays pick-ups are in Bryant at Ebb and Company (3404 NE 55th Street) and Wednesdays are in the Columbia City neighborhood.
